Preparation:
Preheat oven to 425*F. Slice cooked chicken into 1-inch thin strips. Place chicken on large bowl; add barbecue sauce, tossing gently to coat. Add chopped bell pepper and onion to chicken mixture. Place 4 tortillas on pizza pan. Divide chicken mixture evenly over the 4 tortillas. Shred cheese evenly over mixture; top each with a second tortilla. Lightly spray each tortilla with vegetable oil (if desired). Bake 8-10 minutes or until tops are lightly browned. Cool 5 minutes. Cut into wedges; serve. |
