White Yeast Bread

Ingredients:

1/2 cup lukewarm water
2 tablespoons dry yeast or 1-large yeast cake
2 cups milk -- (skim is fine)
2 tablespoons shortening or oil
2 cups water
1/4 cup sugar
1 teaspoon salt
10 cups flour to start
 

Preparation:

Stir yeast into lukewarm water, set aside. Heat milk, shortening and water to 110 to 120 degrees in microwave. In a large mixing bowl, combine heated liquids and sugar and salt. Stir to dissolve. Stir in yeast mixture and start adding flour mixing well after every 2 cups are added. When the 10 cups of flour have been added turn out onto a well floured surface and continue kneading flour into the dough until you have added 1 to 2 cups more (it depends on the type of flour). Knead until smooth and satiny and the dough feels elastic. A wonderful way to get rid of aggression and frustration. Knead it well and even beat it a little. It will give you a better bread and make you feel good besides. Form into a large ball. Grease the mixing bowl very well. Put dough into bowl and turn to cover with grease on all surfaces. Cover with a tea towel and let rise until double in bulk. Punch down and divide into 4 portions. Each portion will make 1 dozen dinner rolls or 1 loaf of bread. Shape and place into greased pan cover and let rise until almost doubled again. Bake at 400^F. 15 to 20 minutes for rolls and 45 to 50 minutes for loaves. They are done when hollow sounding when tapped on the bottom. I usually make a 9 X 13 pan of rolls and 2 loaves of bread. Variation: You can replace 2 cups of white flour with any whole grain of your choice. ie; whole wheat, oatmeal, wheat germ, oat bran, graham flour, rye flour etc.. Add this as the second 2 cup portion when adding flour for the best results.
