Spinach And Feta Quiche

Ingredients:

10 ounces spinach fresh or frozen -- thawed and drained
1 crust pie shell
1/4 cup red pepper -- diced
1 cup feta cheese -- crumbled
2 tablespoons black olives -- finely chopped
1 1/2 cups milk or cream
4 large eggs
1 teaspoon dried basil
1/2 teaspoon leaf oregano
1/8 teaspoon salt and pepper to taste
 

Preparation:

1. Place oven rack on lowest possible leve. Preheat oven to 425F. 2. Trim fresh spinach and cook until just wilted. If using frozen, thaw and squeeze dry but do not cook. 3. Chop spinach and sprinkle over bottom of pie shell. Sprinkle with red pepper, feta and chopped olives. 4. In a bowl whisk eggs ans seasonings. Pour mixture into pie shell. Place on baking sheet and place in oven. 5. Bake until edges of pastry begins to brown, 10-12 minutes. Without opening the door, reduce oven temperature to 350F and bake until center or quiche seems set when jiggled; about 20-25 minutes. 6. Remove to rack and let stand for 5 minutes before cutting. Notes: If you use a frozen purchased pie shell make sure to use a deep dish one or there will be too much filling. If you cannot find a deep dish pie shell in the store and do not want to make one, reduce the eggs to 3 and the milk to 1 cups.
