Roasted Pear Salad with Blue Cheese

Ingredients:

2 cups corn bread, cut into 1x1 inch cubes
2 medium pears, cored and quartered lengthwise
4 strips bacon
3 tablespoons white balsamic vinegar
1 tablespoons olive oil
2 cups torn frisee or curly endive
2 cups torn leaf lettuce
4 ounces crumbled blue cheese or gorgonzola
1 teaspoon Coarsely ground black pepper
 

Preparation:

Spread corn bread cubes ina single layer in a shallow baking pan. Place pears in a greased shallow baking pan. Place both pans in a 400 F oven. Bake bread cubes 15 to 20 minutes to till toasted and lightly browned, stirring frequently. Bake pears for 20 to 25 minutes total or till tender. Let pears cool slightly; cut pears into 1/4 inch thick slices. Meanwhile, cook bacon slices in a large skillet over medium heat till crisp. Remove bacon, reserving 1 tablespoon of the drippings in the skillet. Crumble bacon and set aside. Place skillet over medium heat. Whisk in the vinegar and oil. Bring to boiling. Toss together frisee or endive, leaf lettuce, corn bread cubes, pears, and bacon in a large bowl. Add hot dressing and toss gently to coat. Divide salad among four plates. Sprinkle with cheese and pepper. Serve warm.
