Vanilla Custard 2

Serves: 1 1/4 cups
 

Ingredients:

2 large eggs -- separated
1/2 cup sugar
1/2 cup milk
2 tablespoons flour
1 teaspoon vanilla extract
1 teaspoon plus vanilla extract to taste
 

Preparation:

In the top pan of a double boiler, combine egg yolks, sugar, milk, flour, and the 1 teaspoon vanilla. Whisk to blend, then place over gently boiling water and cook, stirring, until mixture is thickened and coats the back of a spoon. Remove from heat and let cool to room temperature. In a bowl beat egg whites until stiff peaks form. Gently fold egg whites into custard. Add vanilla to taste.
