Steak And Onions, Austrian Styly

Ingredients:

1 tablespoon butter or margarine
1 tablespoon salad oil
2 large onions -- thinly sliced and separated into rings
1 clove garlic -- minced
2 medium beef fillets -- or
3/4 pound top sirloin steak -- 3/4 inch thick cut in 2 equal piece
1 teaspoon salt and pepper
1/4 cup beef broth
 

Preparation:

Heat butter and oil in large skillet over medium flame. Add onions and garlic and cook, stirring occasionally, until onion is limp and golden, about 30 minutes. Increase flame to brown onion slightly; remove onion from pan. Sprinkle beef fillets with salt and pepper. Brown steaks quickly on both sides, over a high flame, adding a little more butter and oil, if necessary. Reduce flame and cook until meat is done to your liking. Remove meat to a warm platter. Add beef broth to skillet. Heat quickly to reduce liquid slightly, stirring up browned bits from pan. Reduce flame, stir in onion and heat thoroughly. Spoon onion mixture over steak to serve.
