Sauteed Abalone

Ingredients:

1 cup flour
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 large egg
2 tablespoons milk
1 cup cracker crumbs
1/2 teaspoon basil
8 ounces abalone steak
1/2 pound butter
2 tablespoons garlic
 

Preparation:

Combine flour, salt, and pepper in a shallow bowl or pie pan combine eggs and milk-mix well combine cracker crumbs and basil in a shallow bowl or pie pan for appetizers, cut steaks into strips-for entree, leave steaks whole pat abalone dry with paper towels dredge in flour, pat with your hands to shake off excess dip in egg mixture to coat evenly, allow excess to drip off coat in seasoned cracker crumbs place in a pan, cover, and chill for 30 minutes to set coating heat a small amount of butter and garlic in a skillet saute abalone in small batches for 2 minutes per side, until golden drain on a cooling rack and blot with paper towels serve hot or warm
