One Pot Dinner
Grrrrrgh!
Course : Beef
From: HungryMonster.com
Serves: 6

Ingredients:

3 tablespoons vegetable oil
1 small onion -- chopped
1 large egg -- lightly beaten
1 pound ground beef
1/4 cup water
1/2 cup plain bread crumbs or more if required
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic salt
4 medium potatoes -- scrubbed and sliced
1 package frozen crinkle cut carrots -- 20 oz. size

Preparation:

Heat the oil in a skillet on medium-high heat. Reduce the heat to medium once oil is hot. Place the onion on the bottom of the pan. In a large bowl, mix the egg, beef, water, bread crumbs, onion powder and garlic salt. Press meat into the bottom of the bowl to form a rounded loaf. Invert the bowl to remove and place the loaf on top of the onion. Place the sliced potatoes around the loaf and the carrots atop the potatoes. Sprinkle the entire thing with additional seasonings if desired. Cover and cook for about 1 hour. After 30 minutes turn the meatloaf over and stir the vegetables. Additional water may be added also. NOTES: For a more flavorful loaf, substitute beef or vegetable broth for the water in the recipe. When the loaf is almost done, I like to brush the top with a mixture of 4 tablespoons packed light brown sugar, 1/2 cup ketchup, 2 tablespoons Worcestershire sauce and 4 tablespoons white vinegar.
