Turkey Meatloaf

Ingredients:

1/2 pound dark or white cooked turkey meat -- cut into large chunk
1/2 pound smoked turkey breast or pastrami -- cut into juliennes
1 pound ground turkey
1 cup chicken or turkey broth
1 large egg
20 pieces crushed saltine type crackers -- or 1 cup leftover mashed potatoes
1 cup chopped onion
1 teaspoon pepper -- to taste
1 spray vegetable cooking spray

1 can crushed pineapple
1 tablespoons cornstarch
1/4 cup brown sugar
2 tablespoons mustard
 

Preparation:

In a food processor fitted with the metal blade, pulse the cooked turkey until coarsely chopped. Do not over process. Combine the cooked turkey, the julienned turkey, and the ground turkey with broth, egg, crackers, onion and pepper. Coat a 9 x 5 x 3 inch loaf pan with cooking spray. Press turkey mixture into the pan, and bake at 350 degrees F. for about 1 to 1 1/2 hours, or until meat thermometer reaches 160 degrees F. and meat is no longer pink. Drain juices if any, and unmold turkey loaf onto a platter, top side up. SAUCE Drain juice from the pineapple, reserve the pineapple itself. Heat the juice over medium high heat and whisk in the cornstarch until well blended. Stir in the brown sugar, mustard, and reserved pineapple. Bring the sauce to a boil, and cook until slightly thickened. To serve, cut loaf into thickish slices, and drizzle with pineapple sauce.
