Catalina Roast

Ingredients:

1 medium beef roast -- cheap cut is fine..
1 bottle Catalina Dressing * -- at least a 16-oz. size
1 package Potatoes (small red or other cut to about that size)
1 medium carrots -- cut in 1-2 chunks
1 pint Mushrooms -- halved
2 tablespoons oil
1 teaspoon salt and pepper to taste
 

Preparation:

* Catalina Dressing is a red, french type salad dressing. Season roast with salt and pepper. Brown in hot oil. I sue and electric skillet. Pour whole bottle of dressing over roast. Cover and simmer for 1 hour or so (or bake at 350 degrees for an hour or so.). Add veggies and potatoes. Stir to coat. Turn roast over. Replace cover and simmer another hour or until roast is done. Makes a good gravy. I usually smoosh the potatoes, and cover them with the gravy. Put veggie and meat on the side. Serve extra gravy in a bowl on the table.
