Beef Sates With Peanut Sauce

Ingredients:

1/2 cup purchased teriyaki sauce
2 cloves garlic -- minced
3 tablespoons fresh lime juice
1 tablespoon minced peeled fresh ginger
2 tablespoons brown sugar
2 pounds beef skirt steak cut into 3x1/2-inch -- strips
16 skewers bamboo skewers -- soaked in water, 30 minutes
1/2 cup creamy peanut butter
1/2 cup canned low-salt chicken broth
1 tablespoon soy sauce
1 dash dried crushed red pepper
6 slices lime wedges
 

Preparation:

Combine teriyaki sauce, garlic, 1 tablespoon lime juice and 1 tablespoon brown sugar in large glass baking dish. Stir until sugar dissolves. Add beef and toss to coat. Cover and marinate 30 minutes. Meanwhile, prepare peanut sauce. Place peanut butter in heavy small saucepan. Gradually whisk in broth. Add remaining 2 tablespoons lime juice and 1 tablespoon brown sugar with soy sauce and crushed red pepper. Stir over medium heat until smooth and thick, about 6 minutes. Prepare barbecue (medium-high heat) or preheat broiler. Remove beef from marinade and thread on skewers. Grill or broil until cooked through, about 3 minutes per side. Serve with peanut sauce and lime wedges. Prep Time: 40 minutes Cook Time: 15 minutes Makes: 4 servings Sates are an Indonesian specialty of grilled meats.
