Edris Warren's African Apple Pie

Ingredients:

---CRUST---
2 cups sifted flour
1 teaspoon salt
1/4 cup cold water
2/3 cup vegetable shortening
1 tablespoon vegetable shortening
---FILLING---
6 medium apples *
1/2 medium lemon -- juice of
1/2 cup sugar
1 1/2 teaspoons cinnamon
1/2 cup walnuts -- coarsely chopped
1/2 cup pitted dates -- coarsely chopped
1 tablespoons butter -- for dotting pie
 

Preparation:

* preferably Pippin, peeled, cored and cut in slices. For crust: Combine flour and salt and mix well. Remove 1/3 cup of this mixture and mix with the cold water to form a paste. Set aside. In a large bowl, cut shortening into remaining flour mixture. Add reserved flour paste. Mix dough and shape into a ball. Divide in half. Roll half of dough out to proper size for 9-inch pie tin, and use to line pie tin. Reserve other half of dough. For filling: Put sliced apples in a medium bowl and mix with lemon juice. Thoroughly combine sugar with cinnamon and then add to apples. Add nuts and dates. Put the filling into the prepared crust and dot with butter. Roll out remaining pie crust and cut into narrow strips. Lay strips on top of pie, weaving strips to make a lattice top. Press crust together around pie. Preheat oven to 450 degrees. Place pie on cookie sheet and bake for 12 minutes. Reduce heat to 350 degrees and continue baking for 45 minutes. Remove from oven to cool. Serve with ice cream or a little whipped cream.
