Berry OR Peach Cobbler

Ingredients:

1/3 Cup sugar
1 tablespoons cornstarch
3 Cup fresh or frozen blueberries thawed if frozen OR
3 Cup fresh or frozen blackberries thawed if frozen OR
3 Cup diced peaches
4 teaspoon lemon juice
1 teaspoon fresh grated lemon peels
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 Cup flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
2 large egg whites
1/3 Cup skim milk
 

Preparation:

Combine sugar and cornstarch in saucepan; add blueberries (or other fruit), lemon juice, lemon peel, 1 tsp. cinnamon and 1/8 tsp. salt. Cook and stir over medium heat for 4 to 6 minutes or until thickened. Place in 4-cup baking dish. To make cobbler topping: Stir together flour, sugar, baking powder, remaining cinnamon and salt. In separate bowl, combine egg and milk; stir into dry ingredients just until moistened. Spoon cobbler topping over the blueberry mixture. Bake at 375 F for 15 to 20 minutes or until golden brown.
