Laisy Daisy Cake

Ingredients:

---CAKE:
2 large eggs
1 cup sugar
1 Teaspoon vanilla
1 cup flour
1 Teaspoon baking powder
1/4 Teaspoon salt
1/2 Cup milk
3 Tablespoons milk
---TOPPING:
10 Tablespoons brown sugar
2 Tablespoons cream
1 Tablespoon melted butter
1/2 Cup coconut or chopped nuts
 

Preparation:

Preheat oven to 350 degrees. Grease only the bottom of an 8 x 8-inch pan. Beat eggs until very thick. Gradually add sugar and continue beating about 3 minutes. Add vanilla. Sift flour, baking powder, salt. Add to the above but do not beat. Heat milk and butter to a boil, stirring constantly. Blend into the above mixture (it will be thin). Pour batter into pan and bake about 30 minutes or until cake springs back when gently touched in the center. Combine ingredients for topping. Spread on cake and broil to brown. Watch closely! A Taste of Blue Spruce Inn I had forgotten all about this cake until I ran across it in a 30 year old cookbook that is one of my treasures. I clearly remember my mother making this cake for special Saturday night dinners. It was always a favorite of mine. Even though it takes some extra work, it really is worth it. The topping is yummy!
