Preparation:
Heat oil and butter in a large skillet. Add the onions and cook until tender. Add tomatoes, tomato puree, lemon rind, stock, salt pepper, sugar and herbs. Bring to a boil over medium heat. Reduce heat and simmer until tomatoes are tender, about 30 minutes.
Puree in batches in a food processor. Taste and adjust seasonings. Serve hot, garnished with chopped parsley and basil. |
