Smartini Soup

Ingredients:

1 small cucumber -- peeled and seeded
3 stalks celery -- cut in 2 inch pieces
1 cup milk
1/2 cup sour cream
1 teaspoon chopped chives
8 pieces ice cubes
1 teaspoon chopped fresh mint
 

Preparation:

Chop cucumber and set side; chop celery. Add milk, sour cream and chives and blend in a processor or blender; add the ice cubes and continue to blend or process until smooth. Pour into a serving bowl, stir in chopped cucumber and garnish with mint. Serve immediately.
