Preparation:
Brown sausage and onion in pan, drain grease. Add green pepper, eggplant and mushrooms, cook for maybe 10 min. Add the rest of the ingredients, except for the cheese and let cook until vegetables are done. Stir in parmesan and mozzarella cheese and its ready to eat. You can also save the mozzarella to sprinkle on each dish as your ready to eat it. It can get sticky if you use a lot and put it in with everything else.
