Preparation:
Melt butter then add onions. Saute gently till beginning to
soften. Then add flour and cook for 1-2 minutes before
adding tomato juice. Stir over medium heat till thick
(beginning to boil). Add soda and stir down (this keeps the
milk from curdling). When foam subsides, add milk and heat
to serving temperature. Add salt and pepper. Do NOT boil
as the soup will curdle. |
