Minestrone Soup

Ingredients:

1/4 cup celery
1 medium Onion -- chopped
2 teaspoons vegetable oil
2 cups broccoli -- chopped, fresh or frozen
2 medium carrots -- cut in chunks
1 medium zucchini -- sliced
2 medium potatoes -- quartered
1/2 head cabbage -- chopped
1 can tomatoes -- 16 oz
1 tablespoon dried parsley -- or
2 tablespoons fresh parsley
1 teaspoon crushed basil
1/2 teaspoon crushed oregano
1/4 teaspoon marjoram -- optional
1/4 teaspoon salt
3 cups water
1 1/2 cups cooked kidney beans
1 cup uncooked macaroni
6 tablespoons parmesan cheese
 

Preparation:

In large Dutch oven, cook onions and celery in oil until soft. Add vegetables, seasonings, macaroni and water. Bring to a boil, cover, simmer 30 minutesw. Add kidney beans and simmer 15 minutes. Sprinkle each serving with 1 tablespoon parmesan cheese.
