Preparation:
* Green or Wax beans or half and half
Method: In large saucepan over medium heat some of the broth. Add onion; cook until tender, about 5 minutes. Stir in beans, zucchini and carrots. Cook and stir until vegetables start to soften, about 3 minutes. Add next five ingredients. Bring to a boil, reduce heat to low and simmer 15 minutes. Cook slightly, pour into container, cover and chill. When ready to serve, heat soup to boiling, add orzo and cook until heated through and orzo is tender about 8 minutes.
Prep: 10 minutes; cook: 30 minutes; ready to serve in 40 minutes |
