Preparation:
1. In a large heavy pot cook bacon, onions, celery, garlic, hot pepper flakes, and all seasoings over medium-high heat 3-5 minutes or until onions are softened.
2. Stir in chicken stock and tomatoes with their juice. Bring to boil over high heat. Add macaroni, reduce heat to medium; simmer uncovered 10 minutes or until macaroni is tender. Stir in artichokes; heat through 2-3 minutes. Taste and adjust seasonings.
3. Serve garnished with parsley and parmesan cheese. |
