Hearty Italian Pasta Soup

Ingredients:

6 slices bacon -- chopped
2 medium Onions -- hopped
2 stalks celery -- chopped
4 cloves garlic -- minced
1/2 teaspoon hot pepper flakes
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/4 teaspoon marjoram
1/4 teaspoon rosemary
1/4 teaspoon thyme
5 cups chicken stock
28 ounces canned diced tomatoes
1 cup macaroni
1 can artichoke hearts -- drained and halved
1/4 cup fresh parsley -- chopped
1/2 cup parmesan cheese -- grated
 

Preparation:

1. In a large heavy pot cook bacon, onions, celery, garlic, hot pepper flakes, and all seasoings over medium-high heat 3-5 minutes or until onions are softened. 2. Stir in chicken stock and tomatoes with their juice. Bring to boil over high heat. Add macaroni, reduce heat to medium; simmer uncovered 10 minutes or until macaroni is tender. Stir in artichokes; heat through 2-3 minutes. Taste and adjust seasonings. 3. Serve garnished with parsley and parmesan cheese.
