Gazpacho

Ingredients:

1 cup cubed french bread with crusts removed
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon garlic
4 cups chilled tomato juice or v-8
3 pounds ripe tomatoes -- seeded, diced
1 cup peeled seeded diced cucumber
1/2 cup diced red onion
2 tablespoons fresh lemon juice
1 dash hot pepper sauce -- such as tabasco
1/4 cup chopped fresh cilantro
 

Preparation:

Combine bread, oil, vinegar and garlic in processor and process until smooth. Transfer to large bowl. Add juice, tomatoes, cucumber, red onion, lemon juice, hot sauce and half of cilantro. Season to taste with salt and pepper. Cover and chill at least 2 hours. Ladle soup into bowls. Sprinkle with remaining cilantro. Prep Time: 20 minutes Cook Time: 0 minutes Makes: 4-6 servings Gazpacho is a chilled Spanish vegetable soup. It is so refreshing that sometimes I serve it as a main course in summer time with just a salad and some French bread.
