Preparation:
Separate egg yolks and whites, reserving the egg whites. Combine sugar and cream cheese thoroughly. Add egg yolks. Add vanilla and lemon juice. Beat egg whites until stiff and fold into above mixture. Pour mixture into 8-inch spring-form pan lined 3/16-inch deep on the bottom with crushed graham crackers. Bake at 250 degrees in a convection oven for 45 minutes or bake at 300 degrees in a conventional home oven for 60 minutes. Remove from oven and allow the cake to cool to room temperature. Top with mixture of 1/4 cup sour cream and 2 teaspoons sugar. Makes 1 (8-inch) spring-form cake. |
