Preparation:
In pie plate, mix together cornmeal, salt, red and black pepper. Dredge fish pieces in cornmeal mixture, patting to coat on all sides. In large heavy skillet heat vegetable oil to 375 degrees. Fry fillets until golden brown. Drain on paper towels. In a small bowl, mix mayonnaise and sweet relish. Serve catfish warm with mayonnaise and relish mix.
