Preparation:
Sprinkle fillets evenly with 1/4 teaspoon salt and pepper, and arrange in a
lightly greased 13 x 9 x 2 inch pan. Bake at 350 degrees for 10 minutes.
Remove fillets with a slotted spatula, place on a heated ovenproof platter,
and keep warm.
Combine mayonnaise and next 3 ingredients. Beat egg white until set but not
dry; fold into mayonnaise mixture, and spread over fillets.
Combine cracker crumbs and paprika; sprinkle over mayonnaise mixture. Bake
at 350 degrees for 10 minutes or until fish is opaque and flakes easily when
tested with a fork. |
