Louisiana Cornmeal-Crusted Fish Fillets

Ingredients:

1 bottle tartar sauce -- (optional)
1/2 cup corn muffin mix
1/4 teaspoon cayenne pepper -- (1/4 to 1/2)
1 teaspoon chili powder
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 large egg white
1 pound white fish fillets -- about 1/2 inch thick
 

Preparation:

In a shallow dish, mix egg white with a fork until broken up. In another bowl, stir together muffin mix, chili powder, cayenne, salt and pepper. Dip fillets in egg white and then into seasoned muffin mix to coat completely. In a large skillet, preferably nonstick, heat oil over moderate heat until it sizzles when a tiny piece of fish is added. Add the fillets and cook until golden on the bottom, about 3 minutes. If fish browns too quickly or too slowly, adjust the heat. Turn and cook other side until it's golden and the fish is cooked through, about 2 to 3 more minutes. Serve with tartar sauce, if desired.
