French Fried Oysters

Ingredients:

1 cup pancake mix -- up to 2
1 Cup corn oil
1 pint shucked oysters -- drained
1 teaspoon salt
1 bottle cocktail or tartar sauce
 

Preparation:

1. Put dry pancake mix into large shallow mixing bowl; add oysters, a few at a time, tossing lightly with both hands until well coated. 2. Shake off excess breading in wire basket; deep-fry, a few at a time, in fat heated to 375 F. for 1 1/2 to 2 minutes, or until golden. Drain on paper towels. 3. Repeat until all oysters are cooked. 4. Salt lightly and serve with cocktail or tartar sauce as first course or main course. NOTE: Equal results may be obtained by frying oysters in 1-inch hot fat or oil in large frying pan. Keep turning oysters until browned on all sides. French fried oysters are the basis for the New Orleans' culinary favorite "poor boys," made with loaf of Italian or French bread. Heat bread and slice in half lengthwise. Remove excess bread from both halves, creating two "boat" shapes. Fill each boat with layers of French fried oysters, thinly sliced tomatoes, sliced dill pickles. lettuce and mayonnaise. Put "boats" together. Simply delicious eatin
