Tandoori Pork Saute

Ingredients:

8 ounces lean pork -- 2 x 1/2-inch strips
1/2 cup onion -- halved, sliced
1 clove garlic -- minced
4 medium fresh California plum -- thick wedges
1 cup plain lowfat yogurt
1 tablespoon flour
1 1/2 teaspoons fresh ginger root -- grated
1/2 teaspoon turmeric
1/8 teaspoon pepper
3/4 cup brown rice
1/4 cup wheat berries
2 cups water
1 medium plum -- sliced in wedges
1 medium orange -- chopped
1 bunch green onion -- chopped
 

Preparation:

Cook pork in nonstick skillet, half at a time, 2 minutes or until browned, turning occasionally. Transfer to platter. In same skillet, saute onion and garlic 1 minute. Add plums; saute 1 minute longer. Remove from heat. Return pork to pan. Combine yogurt with flour. Add to skillet along with ginger, turmeric and pepper. Bring to boil, then simmer 10 minutes, stirring occasionally. Serve over Nutty Rice and surround with condiments (plum wedges, oranges and green onions). Nutty Rice: Bring 2 cups water to boil in saucepan. Add 3/4 cup brown rice and 1/4 cup wheat berries. (Or, omit wheat berries and use 1 cup brown rice.) Return to boil, cover and simmer 20 to 25 minutes or until rice is tender.
