GARLIC-PEAR PUREE

Ingredients:

6 medium medium-ripe Bosc pears -- peeled, cored and cut into 1/2-inch cubes
4 cloves garlic -- minced
1 cup pear -- apple, or white grape juice
3 tablespoons light brown sugar
1/4 cup extra-virgin olive oil
1 tablespoon fresh lemon juice
1 1/2 tablespoons coarsely chopped fresh rosemary
1 teaspoon salt
1 teaspoon ground pepper
 

Preparation:

Combine the pears, garlic, juice and brown sugar in a medium saucepan. Bring to a simmer over medium-high heat. Continue simmering, uncovered and stirring occasionally, until the pears are mushy and most of the juice has evaporated, about 25 minutes. Puree the pear mixture in a food processor fitted with the steel blade. With the machine running, pour in the olive oil through the feedtube to make a smooth and creamy puree. Season the puree with the lemon juice, rosemary, salt and pepper.
