Preparation:
Combine the pears, garlic, juice and brown sugar in a
medium saucepan. Bring to a simmer over medium-high
heat. Continue simmering, uncovered and stirring
occasionally, until the pears are mushy and most of
the juice has evaporated, about 25 minutes. Puree the
pear mixture in a food processor fitted with the steel
blade. With the machine running, pour in the olive
oil through the feedtube to make a smooth and creamy
puree. Season the puree with the lemon juice,
rosemary, salt and pepper. |
