Banana Barbecue Glaze

Ingredients:

8 large bananas -- roasted
2 tablespoons butter
1 1/2 cups chopped onion
2 tablespoons grated ginger
1/2 cup diced red pepper
1/2 cup diced yellow pepper
2 tablespoons garlic
1/2 cup brown sugar
1 1/2 cups spiced rum
1 1/2 cups fresh orange juice
1/2 cup rice wine vinegar
1/2 cup thai chili sauce for chicken
1/4 cup chopped cilantro
1 teaspoon salt and pepper
 

Preparation:

1. To roast bananas, place whole unpeeled bananas on a baking sheet and place in preheated 375· oven until black and soft, about 25 minutes. Remove and cool. 2. Saute´ the onions in the butter over medium heat for three or four minutes to soften, do not brown. 3. Add ginger, peppers and garlic, cook one minute. 4. Add brown sugar, stir and add rum, orange juice, vinegar and chili sauce. 5. Bring to a boil and add mashed bananas and simmer ten minutes. 6. Add cilantro, salt and pepper. 7. Cool and set aside. If mixture is thin, thicken it by pureeing in the food processor for a second or two. You want to keep some chunky texture, so do not over process. 8. To use on fish or shrimp: grill or pan sear, place on oven proof pan, spoon glaze over in an even coating and finish cooking in the oven until done. 9. Pass additional glaze to use as sauce if desired. Makes one quart of glaze
