Preparation:
1. Drain cherries on paper toweling until thoroughly dry or overnight. 2. Melt butter and combine with syrup and salt. Stir in powdered sugar (be sure to sift first!) Knead until smooth. Chill. 3. Shape about 1 t. fondant around each cherry, making sure that cherry is completely covered. Freeze at least 1 hr.* 4. Dip frozen cherries in chocolate and let harden on waxed paper. 5. Allow to ripen for several days to liquify centers.
* Any leftover fondant can be flavored with extract, colored and shaped for delicious mints. After setting, these can be dipped in leftover dipping chocolate for chocolate covered mints. VERY GOOD. |
