Preparation:
Wash potatoes, place in Dutch oven and cover with water. Bring to a boil, and reduce heat. Cover and simmer 20-25 minutes or until tender; drain well. Cool slightly and slice to 1/4" thickness. Place in a large mixing bowl and toss with vinegar and olive oil. Pour Herb Dressing over potatoes, tossing well. Cover and refrigerate until thoroughly chilled.
Herb Dressing: Combine all ingredients and pour over potatoes. |
