Green Chili Sauce

Ingredients:

2 teaspoons vegetable oil
1/2 medium Onion -- minced
2 clove garlic -- minced
1 teaspoon ground cumin
1 pound green chili peppers -- roasted, peeled, minced
1 cup chicken broth -- (recipe)
1 medium jalapeno pepper -- minced
1/2 teaspoon ground oregano
1/2 teaspoon salt
 

Preparation:

1. Heat the oil in a saut‚ pan over medium-high heat. Add the onions and cook until tender. Stir in the garlic and cumin and cook briefly. Technique: Sweating Vegetables 2. Stir in chili peppers, chicken broth, jalapeño, oregano, and salt. Simmer the sauce for about 30 minutes and adjust the consistency if needed with extra broth. Pur‚e the sauce. 3. Use the sauce or properly cool and store. Green chili sauce is an essential element in many popular Mexican and Tex-Mex dishes.
