Ginger Peach Ice Milk

Ingredients:

4 medium ripe fresh peaches -- diced
2 cans lowfat evaporated milk -- (12 ounce) divided
1/2 teaspoon ground ginger
1 package plain gelatin
1/2 cup sugar
2 teaspoons vanilla
1/2 pint nonfat vanilla yogurt
2 tablespoons minced candied ginger
6 medium ripe peaches or nectarines -- diced
 

Preparation:

Puree diced peaches with 1/2 can milk and ground ginger in blender or food processor. Combine 1/2 can milk with gelatin in saucepan; heat, stirring until gelatin dissolves. Add sugar and stir just until it starts to dissolve. Add remaining can of milk, the pureed peaches, vanilla, vanilla yogurt and candied ginger. Freeze in electric ice cream maker according to manufacturer's directions. After being solidly frozen, the ice milk tastes creamiest if allowed to soften somewhat before serving. Top with peaches or nectarines.
