Ingredients:

6 pounds fresh spinach
3 tablespoons olive oil
1/4 cup pork fat
3 tablespoons pine nuts
3 tablespoons raisins
1/4 teaspoon kosher salt
1/4 teaspoon pepper
 

Preparation:

blanch spinach in boiling water drain, rinse in cold water, and drain well heat oil in a large skillet, over a moderate flame add the pork fat, heat and stir to render the fat remove the cracklings with a slotted spoon drain on a cooling rack and blot with paper towels add the spinach, pine nuts, and raisins heat and stir for 2-3 minutes, until hot season to taste with salt and pepper serve hot
