Pineapple Pork

Ingredients:

6 ounces boneless pork sirloin -- cut into 1 inch cubes *
1/2 cup pineapple chunks in juice
1 teaspoon tamari soy sauce
1/2 teaspoon fresh ginger -- minced
1 dash white pepper
1 teaspoon cornstarch
2 teaspoons chicken broth
1 drop hot sauce
1 cup green pepper -- cut into chunks
1/2 cup carrot -- grated
1 cup bean sprouts
6 medium snow pea pods -- fresh
 

Preparation:

* I used 2 pork chops, removed all visible fat. Spray frypan with cooking spray, heat pan, add pork stir-fry until lightly browned. Drain pineapple, set aside, to the pineapple juice add tamari soy sauce, fresh grated ginger, pepper and hot sauce, pour into the fry pan, mix well to make sure the pork is covered with the sauce mixture. Cover and simmer 20 minutes. Mix cornstarch and broth then mix into the juices in the pan if not enough liquid add some more broth, cook until sauce thickens. Stir in the pineapple, green pepper, grated carrots, pea pods, and bean sprouts cook for about 3 or 4 more minutes. Serve over hot steamed rice.
