Cinnamon Couscous Salad With Dried Fruit

Ingredients:

1 tablespoons olive oil
1/4 cup onion
2 cloves garlic
1/4 cup dried apricots
1/4 cup dried cranberries
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups water
1 cup couscous
1/3 cup orange juice
3 tablespoons olive oil
1/4 cup chopped pistachios
1/4 cup chopped fresh italian parsley
 

Preparation:

Heat oil in heavy medium saucepan over medium-high heat. Add onion and garlic and saute 3 minutes. Stir in apricots, cranberries, salt and cinnamon. Add water and bring to a boil. Remove from heat. Add couscous. Cover and let stand until water is absorbed, about 10 minutes. Fluff couscous with fork. Refrigerate until cool. Whisk orange juice and oil in small bowl until well blended. Pour over couscous mixture. Add pistachios and parley and stir to blend. Season to taste with salt and pepper. Prep Time: 15 minutes Cook Time: 15 minutes Makes: 4-6 servings Couscous is so easy to make, and so very versatile. Here I flavor the cooking liquid with cinnamon and then add dried fruits for texture. Try it with grilled lamb burgers.
