Punter's Point Salad

1/2 cup wish-bone italian dressing
1 tablespoon grated parmesan cheese
1/2 teaspoon oregano or basil
1 cup cauliflower
1 cup broccoli flowerets
1 cup sliced eggplant or zucchini -- halved
4 large mushrooms -- halved
medium carrot strips


In large shallow baking dish, blend Italian dressing with cheese and oregano; add vegetables, except carrot strips. Cover and marinate in refrigerator, turning occasionally, 4 hours or overnight. On 6-inch wooden skewers, alternately thread vegetables and carrot strips. Brush with remaining marinade.
