Preparation:
cook potatoes in boiling salted water until tender drain well and mash add onions, lemon juice, olive oil, olives, jalapeno chiles, and pepper flakes-mix well season to taste with salt cover and chill for 4-48 hours arrange a lettuce leaf onto each chilled salad plate spoon potato mixture on top of lettuce leaves garnish with triangles of jack cheese and lemon wedges serve chilled |
