Ingredients:

3 tablespoons fresh lemon juice
6 tablespoons olive oil
1 teaspoon salt and pepper
1 tablespoon fresh cilantro -- minced
1 cup red onion -- chopped
2 cups fresh tomatoes -- peeled, seeded,
1 large avocado -- peeled, seeded,
1 teaspoon jalapeno pepper -- minced
 

Preparation:

Whisk together the lemon juice, oilive oil, salt, pepper, and cilantro. Set aside. Combine the other ingredients and toss with the vinaigrette.
