Chayote Salad

Ingredients:

3 medium chayotes
2 tablespoons fresh lime juice
6 tablespoons oil
1/2 cup cilantro -- chopped
1 teaspoon salt and pepper -- to taste
1 medium white onion -- thinly sliced
2 medium tomatoes -- sliced
1/2 cup pitted black olives
 

Preparation:

Steam the whole, unpeeled chayotes until tender. Cool completely. Peel and slice (include the seeds or remove them as you prefer.) Pour the lime juice, oil, and cilantro over the slices in a bowl. Season with salt and pepper. Let marinate about 15 minutes. Pour boiling water over the sliced onion and let it sit 5 minutes. Drain and rinse with cold water. Arrange the chayote slices on a serving platter or on individual plates. Top with onions, tomato slices, and olives. Drizzle any dressing remaining in the bowl over the top. Notes: Chayote is a vegetable that can be served hot as a side dish or, in this case, marinated in a salad. Try it in recipes as a substitute for zucchini or yellow squash.
