Black Bean Salad 2

Ingredients:

3 cups cooked black beans
2 medium tomatoes -- chopped
2 medium red peppers -- finely chopped
1 cup yellow corn
3 cloves garlic -- minced
1 medium jalapeno pepper -- minced
1/4 cup fresh lime juice
2 tablespoons red wine vinegar
1 tablespoon cumin
1 tablespoon olive oil
2 tablespoons chopped fresh cilantro -- optional
 

Preparation:

Combine all ingredients and let the bowl sit in the refrigerator for several hours to blend the flavors. Serve. 8 servings/Serving size: 1 cup
