Ingredients:

1 tablespoon vegetable oil
1 pound kielbasa -- cut into 1/2 inch slices
3 cups cooked rice
16 ounces red kidney or pinto beans -- rinsed and drained
1/2 cup hickory-smoked barbecue sauce
 

Preparation:

In a large skillet, heat oil over medium-high heat. Add kielbasa and cook until browned; drain. Stir in rice, beans, and barbecue sauce. Cook about 5 minutes, or until heated through, stirring occasionally. Serve with tortilla chips on the side, if desired.
