Banana Rum Rice Fool

Ingredients:

4 medium bananas -- peeled
200 grams cooked white rice -- (any type)
4 tablespoons soft dark brown sugar
4 tablespoons dark rum
4 tablespoons chocolate nut spread
500 grams natural Greek yogurt
4 package crisp biscuits or wafers to decorate
 

Preparation:

Chop half the bananas into the bases of four stemmed glass goblets or tumblers. Put the rice, sugar, rum, chocolate nut spread and half the yogurt into a food processor. Whiz to a speckled marbled puree or fool. Spoon a portion on top of the bananas. Top with the remaining bananas, remaining yogurt, then add the biscuits or wafers. Serve cool.
