Ingredients:

9 cups water
2 ounces kombu
1 ounce katsuobushi
 

Preparation:

combine water and kombu in a large saucepot, over a moderate flame bring just to the boil, remove from heat remove and discard kombu add bonito flakes and allow to settle on bottom strain through a cheesecloth-lined chinois use within 24 hours
