Broccoli Cheese Rice Casserole

Ingredients:

2 packages uncle bens long grain and wild rice (5 min. variety)
2 packages frozen chopped broccoli -- prepare as directed
14 Ounces chicken broth
16 Ounces chopped mushrooms -- rinsed and drained
16 Ounces whole water chestnuts -- rinsed/drained
2 cups nonfat cheddar cheese -- grated
1 cup croutons -- lowfat
1 1/2 teaspoons mrs. dash extra spicy salt free seasoning
 

Preparation:

Prepare the rice as directed on the package. Add the cooked broccoli, mushrooms, water chestnuts, and chicken broth to the rice mixture. Add seasoning and the grated nonfat cheese. Spoon into a large casserole dish that has been sprayed with a nonfat cooking spray. Top with homemade lowfat croutons. Bake, covered, at 350ΓΈ for 30-35 minutes. Remove cover the last 10 minues.
