Stir Fried Turkey With Almonds And Zucchini

Ingredients:

1 pound turkey meat -- boned, skinned and cut into strips
1/2 large egg white -- (beat egg whites slightl and divide in half)
1 tablespoon corn starch
1/2 teaspoon salt
1/2 teaspoon sugar
6 tablespoons vegetable oil
2 cups unpeeled zucchini -- cut on the diagonal
1 cup whole blanched almonds
4 slices fresh ginger or 1/2 tsp. ground*
4 cloves garlic peeled and flattened but left whole
1 1/2 tablespoons dry sherry wine
1 1/2 teaspoons soy sauce
1/4 cup chopped fresh sweet red pepper or drained canned pimento
 

Preparation:

Put turkey strips in a small bowl and mix in egg white, cornstarch, salt, and sugar. Cover and refrigerate at least 30 minutes. Measure and prepare remaining ingredients before starting the cooking. To cook, heat 3 tablespoons oil in large heavy skillet, wok or electric wok over moderat high heat (375) add turkey and stir fry about 2 mintues., until pieces turn white. With slotted spoon, transfer turkey to a bowl. Add another tablespoon of oil to skillet and heat; add zucchini and stir fry over moderate high heat about 1 minute. Until the pieces color slightly, but remain crisp. Transfer zucchini to a second bowl. Heat another tablespoon of oil in skillet, add the almonds and stir fry about 1 minute utnil they are golden brown. Heat remaining tablespoon of oil in skillet, add ginger and garlic, stir fry about 30 seconds, and then scoop them out and discard them. Add turkey, sherry and soy sauce to the garlic flavored oil in the skillet and stir over moderately high heat about 15 seconds. Add zucchini and almonds and heat, stirring well to combine. Sprinkle with chopped red pepper and turn out onto a serving dish. *if using ground ginger, mix and add it with the sherry and soy sauce.
