Ingredients:

14 pieces Manicotti Shells cook to directions less 5 minutes
2 links Turkey Sausage
1 jar Hot Cheese or
8 ounces Blue Cheese
2 tablespoons Hot Sauce
1 jar Spaghetti Sause
1 medium onion
1 cup grated Parmesan or Romano Cheese

Preparation:

Pre-heat oven to 350 degrees. Cook Manicotti Shells in 4 quarts of rapidly boiling water, for 7 minutes. Then place the delicate shells in an ice water bath, to stop cooking. Put Turkey Sausage and onion in a food processor and process into small pieces. Add sausage and onion mixture to cheese and hot sauce, in a heated skillet, and cook slow, until cheese begins to melt. To Assemble Manicotti: Put cheese mixture into a pastry bag without a tip. Then begin to fill each shell, until the stuffing is visable, on each end. Arrange in a baking dish, coated with cooking spray, without the manicotti touching. Cover with your choice of spaghetti sauce. Bake at 350 degrees for 30 minutes. Then add the the parmesan cheese, and bake for 15 minutes, uncovered.
