Preparation:
Combine beans and water in a large saucepan, over a high flame. Heat to a boil, reduce heat, and simmer for 2 minutes. Cover and let stand for 1 hour, drain, and reserve liquid. Measure 2 cups reserved liquid, add water as needed. Combine with sugar, mustard, and molasses-mix well. Cut salt pork in half, score one half, and mince the other half. Combine beans, onion, and minced salt pork in a large casserole or bean pot. Pour sugar mixture over beans top with scored salt pork. Cover and bake at 300 degrees for 5-7 hours, adding liquid as needed. Serve hot. |
