Lentil Vegetable Soup

Serves: 4 - 6
 

Ingredients:

1 small onion -- finely chopped
1 medium carrot -- thinly sliced
1 stalk celery -- sliced
1 clove garlic -- minced
1/2 teaspoon ground cumin
1/4 teaspoon ground allspice
1/2 cup lentils
1 1/4 cups water
1 1/4 cups beef broth
1/2 cup tomatoes -- chopped and drained
1 cup spinach -- coarsely chopped
2 tablespoons fresh lemon juice
1 teaspoon salt and pepper to taste
 

Preparation:

1 .In a large saucepan, saute onion, carrots, and celery in oil until tender. 2. Add garlic, cumin, and allspice, stir well. 3. Add lentils, and water, bring to a boil. Reduce heat and simmer covered for 5 minutes. 4. Add beef broth and simmer covered for 25 minutes. 5. Stir in tomatoes and spinach, stir and simmer for 2 minutes. Add more liquid if necessary. 6. Squeeze in lemon juice from half of a fresh lemon, and season with salt and pepper to taste.
